PORTLAND, MAINE — Rogers Collection is very excited to introduce exceptional NEW PRODUCTS by Quesos La Cabezuela from the Royuela-Campos family: three deliciously diverse goat milk cheeses! There is the two-month aged Traditional Semicurado with its lightly hand-salted, herbal, grassy smooth flavor; the Lingote Cremaso–inspired by the classic French brie– with a soft aroma and delicate mouthfeel with a natural white rind developed from 45 days of aging in the cellar; and lastly is Roy Goat Cheddar, an homage to the buttery cow’s milk English cheddars–and to Roy, the Galician cheesemonger who introduced La Cabezuela to the celebrated cheddar producers in Lincolnshire and Devonshire Counties, where they learned the traditional techniques for making authentic English-style cheddars.

Although all of the cheeses in the La Cabezuela product line are unique from one another, the one commonality is the delicious and distinctive goat’s milk with unmistakable notes of acorn, thyme and heather. The goat milk used at La Cabezuela comes exclusively from the breed native to the Guadarrama mountains outside of Madrid–in a “small town, close to everywhere and far from anywhere.”

The Guadarrama breed was in danger of becoming extinct, and this inspired the Royuela-Campos family to embark on a very vital and personal project: to dedicate themselves to saving the breed and the local cheesemaking traditions. The family holds a deep connection to the territory with an understanding that a sustainable future for the region and the Guadarrama goats starts with the people, the mountains, the traditions and the goats themselves.

With the Roy Goat Cheddar, La Cabezuela aspired to create a cheese from Madrid using the milk from the Guadarrama goats that paid tribute to those classic giant English wheel cheeses with their buttery, cheddar flavors.

And Rogers Collection is delighted to announce a wheel of the Roy cheese will be cracked at the Fancy Food Show this summer! Just as with any big wheel of cheese–think Parmigiano-Reggiano– the Roy Goat Cheddar wheel requires the skilled ritual of cracking. However, there are a few elements of the Roy cracking that are unique to this cheese. The tools include a cable of iron inox which cuts close to the pore of the cheese and invites some of the mould into the wheel, as well as a “lace knife”—all in all, it is a spectacle to behold!
