Cheese customers in the Madison area have let it be known that they’ll miss Rush Creek Reserve this holiday season, and retailers are working to find replacements.
“People just want that wood-bound cheese at their table,” said Jeanne Carpenter, specialty cheese manager at Metcalfe’s Market. “They’re not asking about Rush Creek, they already know we won’t have it. They’re looking for something like it.”
The celebrated cheese from Uplands Cheese Co. in Dodgeville is not coming to the market this year, as cheesemaker Andy Hatch worried about recent federal actions concerning raw-milk cheese. Uplands was in compliance, but Hatch didn’t want to invest in making a cheese that could be delayed or kept from the market for reasons he couldn’t anticipate.
