Murray's Cheese Introduces Annelies

NEW YORK  – Murray’s Cheese, New York’s most iconic cheese shop, introduced a brand new cheese to its exclusive Cave Master line this week. It is the first-ever cheese created from initial concept into R&D by Murray’s and then aged in Murray’s Cheese caves.

Annelies is Murray’s take on the classic Alpine favorite, Appenzeller. Created in partnership with famed Swiss cheese maker Walter Räss of Kaserei Tufertschwil, Annelies is named after Mr. Räss’ wife and is the result of a two-year collaboration. Annelies will be aged for three months in Switzerland and nine months at Murray’s Affinage facility in Long Island City. Murray’s will be the only shop selling the cheese outside of Räss’ village of St. Gallen, Switzerland.

“After 75 years in the business, making our own cheese was the next natural evolution for us,” said Steve Millard, Vice President of Foodservice and Merchandising for Murray’s Cheese. “Working closely with cheesemakers has elevated our knowledge of the art of cheesemaking, and allows us to personally craft these unique cheeses, molding their flavor and texture into a fantastic finished product.”

Annelies is the first Swiss Cave Master Reserve cheese launched by Murray’s Cheese, joining a line of seven other unique cheeses that resulted from one-of-a-kind partnerships with some of the world’s best cheese makers. Others include Greensward, Hudson Flower, Hollander, Barden Blue, Other Stephen, Project X and Cornelia. Each is exclusive to Murray’s Cheese and aged to perfection in Murray’s caves. Greensward earned prestigious Best in Show recognition from the American Cheese Society in July 2016.
