Fresh Cheese Right On Time At Clock Shadow Creamery

When Clock Shadow Creamery opens in a few weeks at 538 S. 2nd St., it most likely will be one of only three urban cheese factories in the country.

"Milwaukee has never had a cheese factory in all its history, which I find fascinating," said Bob Wills, who named his new venture after the nearby Allen-Bradley Clock Tower.

There's a simple reason for that. Milk is highly perishable, and making cheese on or near farms just made sense. But times have changed.

Wills credited the local foods movement with creating an insatiable demand for the freshest food possible. And with that in mind, Wills and Clock Shadow's manager and cheesemaker Ron Henningfeld will be focusing on making fresh cheeses.
