FREEPORT — Cheesemaking is a big part of the dairy industry in Stephenson County. While the landscape used to be dotted with cheese production plants all over the county, there still are plants producing local cheeses that are marketed all over the United States.

Bruce Johnson, manager of the Stephenson County Farm Bureau, said while the number of plants may not have increased in the past five years, he said the scope and production has definitely grown. One plant, Nuestro Queso, LLC, in Kent is an example of a new company taking over an old business and making it grow.

Brewster Cheese, while in Jo Daviess County, gets most of their milk from Stephenson County milk producers. Torkelson Cheese Company in Lena produces three types of cheese, but sells more than 40 varieties at its cheese store.
