Winter for us is anything but a rest.
All of the ewes and goats are pregnant and we are getting ready for the big lambing and kidding season which will start April 1. Part of managing them in pregnancy involves extra nutrition for multiple fetus birthing, ultrasounds for everyone and yearly vaccinations.
In preparation for the upcoming cheese-making season we repair equipment in the cheese-making room that has been in use seven days a week for eight months. We order and test new molds from Europe, and welders modify equipment to correct last season’s problems.
We clean the molds with dairy acid and lye to remove any protein residues remaining in any nook and crevice.
