Carr Valley Cheese Announces Limited Release Reserve Gouda

LA VALLE, WI  – Carr Valley Cheese Co. has been making cheese for over 100 hundred years with a focus on traditional techniques applied to innovative products. This month the company debuted a new limited-release product, Reserve Gouda, a traditional variety with a twist.

Master Cheesemaker, Bob Koenig, who is certified in Gouda, starts with fresh cow milk delivered daily from a network of small, local farmers. Using traditional techniques, the cheese is carefully crafted in Mauston, WI with special cultures that add a distinct flavor. The 10lb wheels are then aged under watchful eye for over 9 months to achieve peak flavor. Owner and Fourth Generation Cheesemaker, Sid Cook, said, “You can’t replicate this cheese. It has fruity and floral notes that are only developed by the terroir—the driftless region of Southern Wisconsin.”

“We wanted to keep the flavors of a traditional Gouda, but also embody our Wisconsin-heritage,” said Dave Christoff, National Sales Manager. With almost 100 cheese varieties, Carr Valley says it’s important that every cheese developed meets the standards its farmers, employees and customers associate with the long-standing company.
