Artisan Raw-Milk Cheese Is Back On Wisconsin Shelves

Dodgeville, WI – A year ago, cheese lovers were lamenting the fact that cheesemaker Andy Hatch of Uplands Cheese Company, was suspending production of his fall cheese, Rush Creek Reserve.

“We had to disappoint a lot of people, we were disappointed,” said Hatch. “We missed making the cheese last year. So it feels really good this time to bring it back!”

Last year the FDA had been making some moves towards restricting the production of soft raw milk cheeses. As a precautionary measure, Hatch decided to suspend production of Rush Creek Reserve. Now, one year later, production is back and people are clamoring to get their hands on a gem of this flavorful, handcrafted cheese.
