Arena Cheese's Spring Green Colby Wins Best Of Class

One of the head cheesehead cheese-makers in Wisconsin is from right here in River City, and he has reason to be proud.
Ronald Weil, who has an office in Forest Park Southeast, is one of the majority owners of Arena Cheese, in Arena, Wis. His company's Spring Green Colby won Best of Class at the World Championship Cheese Contest held last month in Madison, Wis. The Colby Deli-Style Longhorn blew away the competition with a score of 99.45; the next nearest competitor rang up a 98.95.
Colby was invented in the town of Colby, Wis., in 1885 when cheesemaker Joseph P. Steinwand decided to try washing his curds in cold water instead of the tepid, 100-degree temperature typically used for cheddar. The result was a cheese that was milder in flavor than cheddar, and also softer and smoother.
