Vermont Sees Decline In Large-Scale Egg Operations

When Henry Marckres began his career at the state Agency of Agriculture 27 years ago, there were 15 egg producers in Vermont with 3,000 or more birds on their farms.
Today, there are two producers in the state whose facilities have more than 3,000 birds: Vermont Egg Farm in Highgate Center (about 100,000) and Maple Meadow Farm in Salisbury (about 65,000), said Marckres, the agency's chief of consumer protection.
Production costs and the price of caring for the birds explains the decline in large-scale egg production, Marckres said. "Most of the places that were raising birds and selling eggs have gone to just distribution," he said.
