It's all about artisan in the food world these days.
Just head to a farmers market, and you'll spot an array of locally produced foods created in small batches, often by traditional methods — the very definition of artisan.
From sauces to salsas to sweets, local specialty food producers are creating the fresh, local and seasonal fare that Indianapolis-area consumers are looking for.
But some local producers are finding a market beyond Indiana.
Capriole goat cheese, made in Southern Indiana, has long been highly regarded in gourmet circles and may be Indiana's most well-known artisan offering. Indeed, says Steven Jenkins in his comprehensive "Cheese Primer" (Workman, $16.95), Capriole's O'Banon is "an American treasure."
