Getting connected at the local level appears to working out for the owners of Twin Brook Creamery.
The dairy farm north of Lynden is undergoing an expansion project at its bottling facility that is expected to increase the capacity of the facility just in time for the upcoming eggnog holiday season. The space will more than triple in size to 2,000 square feet, and new equipment is being installed to speed up the bottling process.
"It's been a steady but steep climb for us," said Larry Stap, who started Twin Brook in 2007 with his wife, Debbie, after their daughter and son-in-law, Michelle and Mark Tolsma, expressed interest in being a part of the family business.
The creamery started out as a way to supplement Stap's main business of supplying milk to the Darigold facility in Lynden. But the creamery, known for its pasteurized, but not homogenized, milk in old-fashioned glass bottles, has quickly grown in popularity.
