Edna Schrock and her husband, Willis, got their start in the dairy business in
Illinois. But in the 11 years they’ve been based in Logan County, Ky., they’ve
earned a reputation for producing some of the finest dairy products in this part
of the country. For the past few years, their milk has been distributed under
the Rebekah Grace label. A few weeks ago, they started selling it under their
own brand: JD Country Milk.
And they’ve developed a full line of exquisite dairy products: whole milk, 2
percent, skim, chocolate, half-and-half, cream, buttermilk and an elusive sweet
cream butter that you might find on the shelves at ValuMarket but only if you
get there before me.
From the get-go, the Schrocks used techniques designed to preserve the vital
milk flavors that too many dairies destroy.
Instead of the high temperature ultrapasteurization that cooks all the life out
of the most widely sold organic milks, the Schrocks use low-temperature
pasteurization techniques that are just as safe, but leave the milk’s flavor
intact.
