SARATOGA SPRINGS – The state’s 455 organic dairy farms comprise fewer than 10 percent of the 4,900 dairies in New York.
And because organic dairies are smaller, they only comprise 5 percent of overall production, so demand for organic milk is much higher than supply, contributing to very favorable pricing – $35-per-hundredweight versus $17 for milk produced conventionally.
That’s why industry leaders say this is a good time for farm owners to consider making the switch to organic production. Only farms that are certified may use the term organic and certification is an annual process that involves a fee and a detailed review of all aspects of the farm operation.
