The Pittsford Wegmans store has introduced a new artisan baguette made with organic flour grown in the Finger Lakes.
The Wegmans Organic Flute is made with an older wheat variety known as Frederick. The flour is grown for Wegman by Lakeview Organic Grain in Penn Yan, Yates County. It is milled by Champlain Valley Milling in Westport, Essex County.
"It has more nuttiness than other flours. It tastes fresh, and that is part of what fun about it. We use it within two weeks of milling. That makes a big difference," says Karen McCoy, vice president of bakery merchandising.
