According to the report, one of the major driving factors of the gluten-free food market in the US is celiac disease and other gluten allergies. Celiac disease is an autoimmune disorder, whereby the small intestine is unable to process the gluten present in certain foods such as wheat, barley, and rye. It affects the lining of the small intestine and disrupts the absorption of nutrients. The continued consumption of foods with gluten may increase the risk of contracting other more serious health disorders such as multiple sclerosis, epilepsy, and certain cancers.
