Sonoma, CA – The Bread Bakers Guild of America’s 2011 regional event series, Breadville USA: Exploring Local Baking in America, will visit the Land of 10,000 Lakes on April 9 and 10. The Guild class, “Blue Ribbon Baking: A Decade of State Fair Baking,” to be held at the General Mills Culinary Center in Minneapolis, MN, will include some of the most unusual and interesting formulas that Dan “Klecko” McGleno has encountered in his years of coordinating the Minnesota State Fair.
Klecko will teach participants in the class to make Old World Potato Brick, a solid sourdough starter used in Polish, Czech, and Russian breads; Red Wine / Black Pepper Biscotti, South African Sourdough with picante peppers, Chocolate Curry / Banana Pecan Quick Bread, and Authentic Pretzel Bread, which Klecko describes as "everybody's favorite bread – wicked good!"
McGleno, the CEO of St. Agnes Baking Company in Saint Paul, MN, has been a bread educator in the United States and Russia for 30 years. He is a cookbook author and has appeared on The Martha Stewart Show.
