Ludger Schulz came into cakes by accident more than 25 years ago when a customer requested a cheesecake-and-cake combination for an event.

The unique filling was a surprise to most Tulsans. It was lighter than the New York-style cheesecake famous across the United States, and Schulz’s cheesecake could be fit between two layers of spongy cake.

That cake will hopefully be the foundation for a nationwide chain of Ludger’s Cakes bakery and restaurant shops.
Owners of Ludger’s Cakes are beginning work to franchise through a deal with Tulsa-based franchising company Beautiful Brands International.
