The shelves at your neighborhood supermarket are lined with gluten free cookies, bread, pasta and dozens of other products.
The "Gluten Free Movement" is fairly new and if you haven't been paying close attention to its growing section at the grocery store, it may have snuck up on you.
The demand for gluten free items is rising as more men and women self-diagnose themselves with gluten intolerance. Gluten is a protein found in products like wheat, barley and rye— in other words, most grain-based foods.
Folks often think if they drop gluten from their diet they will lose weight. Obviously, if you stop eating all grains, you are going to lose some weight (probably water weight from restricting your carbs). But if you replace the grains with products that use alternative flours and ingredients, you are going to end up eating almost the same amount of calories.
