Richmond's Billy Bread Bakery Signs With Kroger

WILLIAMSBURG — Billy Fallen sinks his hands into the large mound of dough that's been plopped onto the wooden table in front of him. He squishes and squeezes the spongy mass, cutting off hunks, weighing them and shaping them into round loaves.

Some of the rounds are flattened in a presser and cut into small circles to make hamburger buns — hundreds of them each week — that are bound for the Burger Bach restaurant in Richmond. Others are shaped into small baby-size bundles, proofed and baked into Billy Bread, the eponymous artisan bread that Fallen has been turning out for the past 14 years, first in Richmond and now also in Williamsburg.

Until recently, Billy Bread was sold at a few local places such as The Cheese Shop and Mad about Chocolate. It's also found in bread baskets at a half dozen restaurants in town, including the Fat Canary, Blue Talon Bistro, Waypoint Seafood & Grill, Second Street and Sal's By Victor. But his business is expanding.
