Fresh crusty bread is still a big part of the American diet, but to some fair-weather admirers, it’s no longer the toast of the town.
The popularity of sandwich wraps, microwavable "pocket" lunches, and an increased awareness of gluten sensitivities (which affect about 10 percent of the U.S. population, to varying degrees) have dampened some of the enthusiasm.
Fad diets that equate all non-complex carbohydrates with Satan haven’t helped, either. And many low-sodium diets also restrict bread consumption.
Then, of course, there’s boredom. Many of us are simply tired of the same-old same-old. But that may be as good a reason as any to experiment, assuming bread is something you can eat and want to include in your diet, if only as an occasional treat.
