The cheesecakes that made Junior’s famous have been baked in New York City, and only in New York City, for more than 60 years — but not for long.

The 103,000-square-foot building will replace a much smaller one in Maspeth, Queens, that has housed Junior’s main baking operation for 15 years, Mr. Rosen said. But he insisted that customers of the company’s four restaurants and its wholesale and mail-order businesses will not detect any slip in quality.
