There has been a change in command at the Julien’s Patisserie Bakery & Cafe’s Hydrostone Market location.
The new owner and operator said Tuesday that he was finalizing details of his acquisition of the business.
“We’re anticipating a smooth transition and expect few regulars will be aware of the change,” Duane Malone said.
The deal give’s Malone franchise-like control of the Halifax business, while maintaining close links to the Julien’s in Chester, which is owned by Laura Mulrooney and Didier Julien.
The deal also gives Malone, 35, the right to open other Julien’s locations in the Halifax-Dartmouth area.
Baked goods for the Hydrostone Market location — including Julien’s renowned fresh butter croissants, French pastries and artisan breads — will continue to come from the Chester bakery.
