Changing Tastes Build Appetite For Specialty Baked Goods

In December 1985, demand for croissants was on the rise.

 

Jacques Patisserie Inc., the largest croissant chain in the region, with five shops and $1.2 million in sales three years in, was looking to expand with new stores and franchises.

Demand for the pastries was also sweetening sales for competitor C'est Si Bon, accounting for about 50 percent of sales at its two Detroit bakeries, Crain's reported at the time.

And French bakery/café chain Michel's Baguette, which operated stores at Novi's Twelve Oaks Mall, Eastland Mall in Harper Woods and Dearborn's Fairlane Center, was selling 500-600 croissants each day at the Fairlane location alone. The pastries accounted for about 20 percent or more of the Dearborn store's $500,000 in sales its first year.
