Boulder, CO – Kim & Jake's, Boulder's most sought-after bakery since its founding in 2010, announces today the entire bakery has become gluten-free. Everything from wedding cakes to chocolate-and-sea salt cookies to loaves of French bread is now made without wheat gluten. In addition, the bakery sells all of its products through the new e-commerce website, kimandjakes.com, as well as at its storefront and select stores regionally.
"We have been working on perfecting gluten-free recipes for several years, while operating a conventional bakery, and we are confident that our gluten-free products are just as good as those made with wheat. In many cases, they are better," said Jake Rosenbarger, a former professional cyclist and chef who along with his wife, Kim Rosenbarger, owns the bakery. "We decided it was time to make the switch to a gluten-free bakery."
A little more than a year after opening the bakery, Jake was diagnosed with celiac disease, an autoimmune condition that prevents people from being able to properly digest a protein found in wheat and select other grains. The condition made running a bakery challenging. Among other things, Jake had to wear a Hazmat mask while baking.
It would have been easier to switch careers. But their passion for baking kept them in the bakery, toiling for more than a year to build a catalogue of gluten-free recipes and techniques that resulted in superb cakes, cookies, breads and more.
Now, Kim & Jake's is one of the country's leading artisanal, gluten-free bakeries. Among other things, Whole Foods Market stores in the Denver metropolitan area sell their products, and Pizzeria Locale – a partnership between the James Beard Award-winning Boulder restaurant Frasca Food and Wine and the Denver-based Mexican restaurant chain Chipotle – uses Kim & Jake's dough for their gluten-free pizzas. In addition, you can find their baked goods on the menus at The Kitchen restaurants across Colorado, Fresh Thymes Eatery and other spots.
Until today, patrons had to drive to the bakery, or visit a Whole Foods Market, to nab a box of strawberry shortbreads or a bag of hamburger buns. But the new e-commerce site lets people across the country experience Kim & Jake's baking excellence.
"We are thrilled with the new website, and with our ability to sell to people in Louisiana and Indiana as well as those lucky enough to live along the Front Range of Colorado," said Kim.
