Principles of Bread and Roll Production is AIB’s foundation course for professional training in bread and roll production and provides an introductory look at the function of ingredients, process control techniques and product evaluation techniques.
Students spend three afternoons in AIB’s production labs where people new to the industry can learn the science, procedures and equipment used in modern wholesale bread and roll production.
Recent attendees of the course gave high marks for the way AIB’s experienced faculty seamlessly balance scientific theory and hands-on practicality to provide a course that expanded their understanding of bread and roll production.
