MontChevre Mini Cabrie Goat Brie

Brie is one of the most accessible and best loved French-style cheeses in the United States. This mild disk-shaped cheese with a creamy center and mushroomy, soft penicillium rind can be found in any grocery cheese case.
Another, more recent U.S. favorite is Chevre, soft, tangy fresh cheese made from goats' milk.
It only stands to reason that sooner or later someone would make a mild Brie cheese using goats' milk for the best of both worlds, soft, satiny and surface molded without the pungency of real French soft-ripened goat cheeses.
There are a number of goat Bries out there, but the one available locally, at the Schnuck's on Lynch and Green River Road, is called Cabrie and made by Montchevre, an American company located in California and Wisconsin.
