Carr Valley is one of the larger quality cheesemaking companies in Wisconsin, with three factories and eight retail stores. In addition to its own versions of traditional favorites such as feta, Colby, Gruyere, Gorgonzola, Mozzarella, smoked Gouda, Fontina, Brie, and on, and on, and on … Carr Valley manufactures 50 completely original cheeses, using cow, goat or sheep milk and blends.

According to the Carr Valley website, it makes nearly 150 types of cheese. However, this is one case where the size of the operation hasn't led to a lower-quality product. A large number of the originals have repeatedly won awards at national and international cheese competitions.

Carr Valley is especially well known for its extensive line of cheddars, ranging from unmolded cheddar curds and one-day-old drippy-fresh wheels, to ancient rounds aged 10 years. Smoked cheddars, flavored cheddars, goat milk cheddars, cave-aged and cloth-wrapped cheddars, Irish-style white cheddar made from spring clover milk — it does them all.
