This raw milk cheese is made by hand at a small mountain dairy in the famous Swiss Alps. The cows are free to roam and graze on mountainsides covered in grasses and wild herbs, and these herbs are vital to the intense flavor of this cheese. And this is no mild cheese—it boasts rich, bold flavors and a faintly sweet finish with a smooth, slightly firm texture.
The bold flavors of Fior Delle Alpi can be harnessed and enhanced in many ways—its slightly-softer-than-cheddar texture makes it versatile — but we like it best on its own.
