Brie is one of France's oldest cheeses and a favorite here in America. The bloomy white rind and slightly mushroomy-tasting, smooth, spreadable interior are enjoyed by almost anyone. Brie is the first "gourmet" cheese people usually include on their cheese platters.

The mild brie we get in the United States is not the same at all as the "real thing" from France. That's because almost all the brie sold in the U.S. is made from pasteurized cows' milk
