Fresh From Florida: Homegrown Beef

LAKE WALES – To Don Quincey, pasture-fed beef looks different – yellowish marbling versus white – and the meat is more tender.

“Delicious,” said Geoffrey Sagrans, assistant director of Materials Management Division at The Breakers in Palm Beach, who tried chunks of brisket.

Both men were at a Lightsey Cattle Co. luncheon Thursday, off State Road 60 between Lake Wales and River Ranch. Cary and Marcia Lightsey served filets so tender, they could be cut easily with a plastic knife. More than 100 attendees ate Fresh from Florida pasture-fed beef, green beans, corn, swamp cabbage, beef sausage and a strawberry parfait.
