YORK, Pa. – On Friday, May 29, Mid-Atlantic Dairy Association and Central York High School partnered to create a unique contest where Culinary Arts’ students made milk-based recipes from scratch, starting from the fresh milk stage. Twelve students were challenged to research the process and thus learn food chemistry basics.
Superintendent Michael Snell of Central York School District said that their learners are engaged in “real-world work” for “real-world audiences.”
“What’s really beautiful about this is the fact that they get to produce something and then have it judged by people in the community,” Snell said.
Dairy farmer Greg Perry from Perrydell Farm in York, who served as one of the four judges, said it was a pleasure to take part in the culinary contest.
“We get lots of visitors to our farm and they really don’t know much about where their food comes from,” Perry said. “ It’s exciting to see students who are not only interested in where their milk comes from, but also in learning how to be creative and innovative in using dairy foods.”
Junior Jessica Vu prepared the winning dish – a pumpkin soufflé with a maple glaze drizzle. As the Grand Prize winner, Vu received a cow-spotted Kitchen Aid mixer for the school’s culinary lab. In addition, Vu earned a professional and personalized chef coat and toque. All contest participants won a culinary tool kit containing a large mixing bowl, whisk, sets of measuring spoons and cups, oven mitt kit, cheese grater and cow timer.
