Recent Listeria Outbreak Reinforces the Importance of Sanitary Equipment Design

A recent multistate Listeria outbreak linked to ready-to-eat foods is a strong reminder that sanitation is not just a daily operating procedure. It is a core food safety requirement that begins with the design, maintenance, and cleanability of the equipment used in production.
According to reporting from People, Fresh & Ready Foods voluntarily recalled more than 80 ready-to-eat products after a multistate outbreak of Listeria monocytogenes was linked to products sold in retail and food service locations, including convenience stores, hospitals, hotels, airports, and airlines. The FDA later reported that the outbreak included 10 illnesses, 10 hospitalizations, and one death.
The investigation is especially relevant to food manufacturers because FDA findings pointed to the production environment and food-contact surfaces as critical areas of concern. FDA noted that environmental monitoring during an inspection identified Listeria monocytogenes on equipment. In a later warning letter, FDA cited serious concerns related to sanitation controls, environmental pathogen control, and the presence of Listeria in the production environment. FDA also identified positive findings on food-contact surfaces, including a conveyor belt and roller where in-process ready-to-eat sandwiches were placed, as well as a slicer component used to slice ingredients for ready-to-eat products.
