Speciality cheeses are now making up the majority of entries at Canada’s oldest display of Canadian and international cheeses.
Evan Matte sliced through the ash-coated block of speciality cheese to determine its texture and flavour.
The circular block of cheese is just one of just under 250 entries Matte and a team of judges examined at the 87th staging of the British Empire Cheese Show.
Come Wednesday, residents will get a chance to purchase a sample of the this years line of cheeses, which will be sold out of a store at the Bay View Mall, opened for three days specifically to sell off this years entries. The event culminates with an award ceremony and cheese makers convention at the Travelodge Hotel on Thursday.
