Golden Touch For Cayuga Blue

INTERLAKEN — For several years since assuming head cheese-making duties at Lively Run Goat Dairy Farm and Creamery, Pete Messmer has focused on bringing more consistency to the creamery’s cheeses — including its popular Cayuga Blue.
“One of the challenges of small-scale cheese making is the variability of the milk as the seasons change,” Messmer said. “As the seasons change the milk’s fat, protein and water levels change. You have to learn what modifications to make over the year to compensate for those fluctuations.”
It seems Messmer has excelled at that.
