West Allis, WI — Simma’s Bakery, located in Wauwatosa, WI, was named the 2017 Bakery Operation of the Year (BOY) by the Wisconsin Bakers Association (WBA).  The award was presented on Monday, March 13th, 2017 during the WBA’s Awards & Appetizers Networking Evening in Milwaukee, WI.  This year’s awards ceremony was held in conjunction with the Midwest Foodservice Expo.

Six outstanding Wisconsin bakeries were nominated for the 2017 Bakery Operation of the Year.  Past winners of this award voted to determine this year’s winner.  The recipient of the BOY award remained a secret until the moment the name of the bakery was revealed.  Mark and Peggy Carollo, owners of
Simma’s Bakery, were in attendance to accept the award.

The Bakery Operation of the Year award was created back in 2001 to recognize an outstanding bakery operation annually.  This year’s BOY award was sponsored by Valley Bakers Cooperative Association. The Carollos received a permanent trophy to display in their bakery.

Mark and Peggy purchased Simma’s Bakery in 2011 and prior to that they owned Croissant Etc., a wholesale bakery, located in Greendale, WI which they continue to operate today.  Croissant Etc. supplies fully baked and frozen dough croissants to food service and the retail marketplace throughout the upper Midwest.  All three of their children have worked at the bakeries at times over the years while going to school, and their oldest daughter is currently working full time at Simma’s.

In their nomination, they wrote, “We hope to continue to build on the reputation that Simma’s has developed over the last 32 years and our decision to purchase our building and double the size of our bakery during our recent expansion hopefully shows the community our commitment to continue to serve the Wauwatosa and surrounding areas.”
