Arena Cheese was pleased to announce that Bill Hanson was awarded certification as a Master Cheese Maker for Colby cheese and Gouda cheese at the Wisconsin Cheese Maker Association banquet this past spring held in Milwaukee at the Wisconsin Center. Originally from Monroe, Wisconsin and learning how to make Cheddar, Colby, Swiss (in copper kettles) and Mozzarella, Mr. Hanson has been making cheese for 30+ years.

In 1999 Mr. Hanson bought Arena Cheese in Arena, Wisconsin one of the oldest ongoing cheese plants in the US and updated the plant and its equipment. Using traditional open vats to make authentic Wisconsin Colby and Colby/Jack cheeses combined with Mr. Hanson’s master cheese making skills, Arena Cheese has won 18 national awards for their Colby and Colby/Jack, including Best of Class for Colby in this year’s World Cheese Championships. Gouda cheese and Hardwood Smoked Gouda cheeses were added in 2009 by Arena Cheese and Mr. Hanson and now can bear the Master Cheese Maker seal and logo. Consistent quality are what Arena’s customers expect and what Mr. Hanson delivers every day.

Arena Cheese has also passed this year the guidelines of BRC (British Retail Consortium) with an A grade. BRC is a stringent safety food guideline under the Global Food Safety Initiative. Continuing improvements in food safety has helped Arena Cheese retain that A grade.
