Polish-Style Cheese Makes A Mark In Oconto Falls, WI

Springside Cheese in Oconto Falls, Wisconsin, has been making cheddar cheese for years. Now they’re expanding their repertoire with a Polish-style cheese.
“We named it Krakow,” said Nathan Hintz, Vice President of Springside Cheese, “and the reason for that is because it’s a Polish cheese, and my father actually started working in the Krakow Cheese Factory in Krakow, Wisconsin. So it kind of fits.”
It all began in the 90’s when Nathan’s brother, Keith, attended a class about the cheeses of Poland at the Wisconsin Center for Dairy Research in Madison.
