Richard Gonzmart really, really wanted to serve fresh-from-Florida beef in his native-inspired Ulele restaurant.

Making that happen was anything but easy.

While sourcing other foods from local and state vendors took some effort, Gonzmart found no supply chain existed for beef (specifically Black Angus steaks) that was produced entirely within the state.

That's because nearly all Florida-born calves are shipped north, usually to the Midwest, for feeding and processing.
