PROVINCETOWN — The new 50-acre aquaculture development area has local shellfish farmers abuzz about the possibilities it could bring to the burgeoning industry on the Outer Cape.
If all goes as planned, the veritable “community garden” of shellfishing could have a transformative effect on the age-old tradition here.
And there’s a decent chance that the butter clam — the sweeter, tenderer and more affordable cousin of the littleneck — will be play a featured role.
“It could be Provincetown’s signature product,” said John Baldwin, a longtime deep-water shellfish farmer and member of the town’s shellfish committee.
