A call for product to compete in the Alaska Symphony of Seafood 2016 was issued Nov. 17 b the Alaska Fisheries Development Foundation, with a deadline for entry forms and fees of Jan. 8.
A new category in 2016 will be Beyond the Egg, to include products made with roe or uni, such as jarred ikura, herring roe-on-kelp, uni paste, or uni crème brulee.
"A significant portion of the value and health benefits in any fishery resource is found in the roe," said Julie Decker, executive director of AFDF. "Now the Alaska Symphony of Seafood will have a category in which these valuable roe products will be recognized and promoted, and further product development will be encouraged.
