Bedford – Bedford – The Pennsylvania Beef Council (PBC) and Hollywood Casino at Penn National Race Course has partnered to create a new and innovative dining series entitled, “12 Chefs; 1 Steer.” This dining series will be the first of its kind in PA and will launch in May.
The dining series will be a monthly dining event featuring 12 of PA’s top Chefs in the Central, PA region. The Hollywood Casino located in Grantville, PA, will host the monthly events. Each of the talented chefs will create a four-course dinner menu utilizing and highlighting two different cuts of beef each month. The cuts will include one signature cut and one secondary cut. Over the course of 12 months, beef cuts will not be duplicated to showcase a total 24 creative beef recipes. Beef will be sourced in PA and will include all production choices with placing a special emphasis on the fact that ALL beef is safe, wholesome and nutritious.
A training event for all of the participating chefs kicked-off on Monday, March 20, as PBC staff led chefs through an educational training session about the Beef Checkoff Program and beef foodservice resources as well as market trends within foodservice. This training introduced the Chef’s to the beef community and reinforced beef as a powerful protein in the foodservice arena. Immediately following, Rick Fetrow; Senior Field Sales Consultant at IBP, Tyson, broke down a side of beef to begin the discussions of carcass utilization. The demonstration provided a deeper knowledge of the beef cuts and some tips on how to capture the best value and eating experience out of each of the primal and sub-primal cuts.
The dining series events will take place May 2017 – April 2018 and will strive to engage patrons in the various segments of the beef community. Be sure to mark your calendar and visit Hollywood Casino the second Monday of each month to get a taste of the “12 Chef’s; 1 Steer” program. The Pennsylvania Beef Council is a producer-controlled and funded organization, which administers the Beef Checkoff Program in Pennsylvania. The Beef Checkoff Program assesses $1 per head on the sale of live domestic and imported cattle, in addition to a comparable assessment on imported beef and beef products. Checkoff revenues may be used for promotion, education and research programs to improve the marketing climate for beef.
