As the weather warms up, local food fans find themselves pining for the fresh flavors of summer. But what to do when the urge for fresh fare gets ahead of the growing season?
Herbs can help bridge that seasonal gap, say chefs, who note that herbs such as cilantro, basil, dill, mint and rosemary often are readily available in supermarkets. Pots of herbs often are among the earliest items to appear at farmers markets, too.
"Basil is one of the easiest ones to grow and to use," said Elizabeth Manning-George, whose family owns Stream Cliff Herb Farm near Commiskey, Ind.
