Restaurateurs Aim To Fine Tune Meat With Planned Processing Plant

A steakhouse that is scheduled to open in a month in South Burlington will be affiliated with a meat processing operation that will supply the restaurant with steaks and other meat, said Jed Davis, one of the restauranteurs involved in the development.

Guild and Company is the new restaurant of the Farmhouse Group, local businessmen (aka Catamount Hospitality) who own the Farmhouse Tap and Grill and El Cortijo, a pair of restaurants on Bank Street. The steakhouse will be on Williston Road in the renovated space where the Ground Round used to be.

The opening of the 200-seat restaurant will be followed in about a month by the start of an associated meat processing and storage facility in Winooski, Davis said.
