The audit’s extensive nature is designed to test the facility’s ability to maintain the strict protocols of modern food safety principles. Such principles extend to both the physical upgrades as well as the procedural adherence required for proper food safety guidelines. Examples of these guidelines include proper maintenance of temperatures per commodity, cleanliness, safety documentation, proper handling of pest control, chemical storage, labeling procedures, and others.
