WENATCHEE, Wash. — Fuji scored highest among five well-known apple varieties in recent taste testing at Washington State University.
Fuji was ranked No. 1 in sweetness, apple flavor, crispness and juiciness and a close No. 2 in firmness by a panel of trained testers. It was tied with Gala as the least sour and was lowest in astringency, an unpleasant tannic flavor that causes dryness in the mouth, said Kate Evans, apple breeder at the WSU Tree Fruit Research and Extension Center in Wenatchee.
The university has tested several selections from its breeding program against single commercial varieties since 2007 but until now had never compared five commercial varieties to each other, Evans said.
