Asian Pears Project At Institute Improving Yield, Appearance

Chef David Upchurch served to a small group of about 30 people Tuesday a lunch featuring Asian pears raised as part of a research project to improve the particular fruit when grown in Virginia.

Upchurch is a member of the Sodexo company, which makes the food served at events by the Institute for Advanced Learning and Research as well as in its Megabytes Café.

He enjoyed working with the pears, which are firmer and crispier than European pears, have a longer shelf life and are available year-round.
