Pork, The Popular Protein

Recent record high beef prices and increasing demand have helped make pork the world’s most consumed protein.

Chicken and beef are taking a backseat to pork, which is now the fastest-growing protein in the foodservice industry. Technomic, Inc.’s 2015 Volumetric Assessment of Pork in Foodservice showed a 2.6 percent increase in the pork category this year, compared to the relatively weak protein growth average of 0.7 percent. The pork category even outpaced the total foodservice industry growth, which is showing an overall growth of 1.2 percent. 

“There are several reasons for the growth of pork on the menu,” says Maeve Webster, President, Menu Matters, a consultancy focused on helping food manufacturers and operators analyze, understand and leverage trends. “First, the cost of pork has almost consistently been below that of beef as well as other red meat and competitive with chicken so that has certainly helped it’s expansion in foodservice.”
