Bristol Farms Goes Live With Spice Rubbed Bacon

CA-based Bristol Farms and Lazy Acres stores are launching Aux Délices des Bois Artisanal Bacon. Spunky, beguiling, and perfumed spice mixtures are hand-rubbed into the bacon. It’s the bacon that thinks it’s a ham, meant to be cooked just until the fat is translucent. The spices stay on the bacon when it is cooked. What little fat is rendered is full of spices that can be used to jumpstart another recipe.

Aux Délices des Bois Bacon (crafted in PA) hits all the right “natural” notes. It contains no hormones or antibiotics, or artificial nitrates. Farmers raise the pigs on a strictly vegetarian diet and follow standard humane husbandry practices.
