Yellow Moon Cheese Company Makes Cheese The Good Old-Fashioned Way

Corey Hinkel, one of the founders of Yellow Moon Cheese Company located in Anniston, AL makes cheese the good old-fashioned way to insure quality.

Nine years ago, Corey Hinkel was the owner of Abigail’s Bakery in Anniston. He became friends with David Wright at Wright Dairy after buying the dairy’s butter. One day, Hinkel suggested they make cheese. Wright agreed, but only if they could do it together, and Yellow Moon Cheese Company was formed.

“We started out on the stovetop making three-pound batches, then we got hundred-gallon vats. We’ve been making cheese together for about five years now,” said Hinkel.

Eventually Hinkel closed Abigail’s to focus on Yellow Moon fulltime, though he still makes his gourmet bread creations on the side. Hinkel spends two to three days a week traveling to market and sell the cheese, and two to three days a week making the cheese.
